South African Fridge Cake/Tart Recipes - Pineapple, Strawberry, Peppermint Crisp, Lemon
1. Pineapple Fridge Cake/Tart Recipe
Ingredients:
1 can condensed milk
1/4 cup lemon juice
1 can pineapple pieces, drained and juice reserved.
12 cherries, quartered (optional)
12 marshmellows, quartered (optional)
3/4 cup cream or 1 sachet Orley Whip
1 pkt Lady Finger biscuits
Method:
Stir condensed milk and lemon juice until thickened.
Add pineapple pieces and mix.
Also cherries and marshmellows, if using them.
Beat cream or substitute and fold in lightly.
Dip biscuits in reserved juice and line a flat dish.
Pour mixture over evenly and refrigerate until set.
2. Strawberry Fridge Cake/Tart Recipe
Ingredients:
1 pkt strawberry jelly
250 g (1/2 lb) cottage (ricotta) cheese
170 g (6 oz) small can Ideal evaporated milk
1/2 cup lemon juice
1 can strawberries, drained and juice reserved
1 tablespoon cornstarch
Tennis or any other biscuits
Method:
Dissolve jelly in 1/2 cup boiling water, and set aside.
Beat evaporated milk until thick and mix in cheese and lemon juice.
Line a flat dish with the biscuits
and sprinkle some of the juice over them.
Add the cooled jelly to the cheese mixture and stir well.
Pour evenly over the biscuits and arrange the fruit on top.
Heat juice and cornstarch, stirring continually, until thickened.
Pour over the top and refrigerate.
3. Peppermint Crisp Fridge Cake Recipe
Ingredients:
1 large slab peppermint crisp
1 1/2 cups cream or 2 sachets Orley Whip
3/4 pkt Tennis biscuits
1 can condensed milk, boiled for 2 hours
and allowed to cool
Method:
Place a layer of biscuits in the bottom of a dish.
Beat cream until thick and mix in caramel.
Grate 3/4 peppermint crisp and add.
Whip mixture.
Spread half over the biscuits.
Repeat: another layer of biscuits with another of mixture.
Cover with remaining 1/4 grated crisp.
Chill in fridge.
 4. Lemon Fridge Cake/Tart Recipe
Ingredients:
250 g (1/2 lb) cottage (ricotta) cheese
1 can condensed milk
1/2 cup lemon juice
grated rind of 1 lemon
1 sachet Orley Whip
1 tablespoon gelatine dissolved in
2 tablespoons boiling water
1/2 pkt Marie biscuits, crushed
30 g (1 oz) margarine
1 tablespoon golden syrup
Method:
Mix first 4 ingredients together and beat well.
Beat Orley Whip until thick and mix in.
Slowly stir the gelatine into the mixture.
Heat margarine and golden syrup until melted.
Stir in the crushed biscuits.
Spread over the bottom of a flat dish.
Pour the mixture over and spread out.
Refrigerate until set.

Nice recipes you provide here, thanks. Definitely I'll tell my mom about this ones here. I thing peppermint crisp and lemon fridge Cake recipes are already tested.. yummy. The rest two pineapple and strawberry fridge cake will definitely replace the ones from keikos cake recipes.
